Grapes: Merlot 60% Cabernet Sauvignon 30% Carmenere 10% Vineyards Location: Luvigliano Hills (PD) Height and exposition: 180 a.s.l. East/Southeast, West Age: 15 years Training system: Spurred cordon and Guyot Plant density: 5000 plants/ha Yield: 60 q/ha Ground: Marl and white chalk Grape harvest: From the first to the last week of September. Picked by hand using crates Vinification: Separate vinification for each grape variety. Destemming in cementtanks. Choice yeast inoculation. Fermentation and maceration from 18 to 28 days, depending on the grape variety, at a temperature of between 22 to 30 °C. Pumping over is carried out 3 times a day. Drawing off is followed by its immediate storage in oak barrels. Malolactic fermentation cycle in wood Ageing: 15 months in oak barrels, 12 in the bottle Alcohol content: 14,5% vol. Residual sugar content: 1,4 gr/l Overall acidity: 5,1 gr/l PH level: 3,66 Dry extract: 29 gr/l Dark ruby red with violet highlights it presents a bouquet of dark fruit such as blueberries, cherries and prunes with traces of the spices, cinnamon, cloves, coffee and cocoa typical of ageing in wood. On the palate it is intense, consistent with a well-defined and silky undercurrent of tannins that balances out the softness of the wine which is full and concentrated yet at once fresh and full of flavour. Balanced and well-structured this wine is elegant and complex with a harmonious and enduring finale.
