Vinification: Light pressing of the whole grapes, wholly impregnating the free-run must, static settling without added enzymes for 48 hours, fermentation 70% in steel tanks and 30% in oak barrels at a temperature of between 16 and 19 °C

Pinot Nero is rarely found in the Euganean Hills and is difficult to turn into wine: we have tried to bring out its characteristic elegance, structure and longevity in this rosé version of the classic method sparkling wine. 24 months ageing on its own yeasts to obtain a sophisticated perlage, an ample bouquet, complex aromas, creaminess on the palate and wave after wave of flowers carried on the wind. The wine harks strongly back to the flavour of the chalky terrain of Terre del Pirio and one is seduced by the sweet spices that transport you to far off shores.
